None of these are verifiably private. SimpleX, Matrix and PGP encrypted messages (you can use any messenger here) are some truly private options.

I recommended looking up the problems with self hosting a mail server first. Just go with Tuta imo, its cheaper and easier.

I don’t think you can. You can only stop internet connections made by Google with the RethinkDNS app (or similar). Changing the location service usually requires flashing a different OS like GrapheneOS.
