You could simply continue to use the older versions - with Linux, you’re not forced to update if you don’t want to. Since it’s open source, you could even continue modifying it freely. I think the people behind Linux are being a bit overkill in supporting older hardware in the most recent releases.
IANAL, but I believe a business can decide not to promote an employee for any reason with the exception of protected characteristics (Gender, race, etc.)
That being said, this is unreasonably shitty, and you should look for a job with more normal management practices. If they’re pulling this, there’s likely a lot more you’re not seeing.

If a website doesn’t load correctly, that’s the websites issue. My browser loads every other website fine. If I have to disable an ad blocker to see your content, that means I don’t want to see your content, because it’s an ad.

I’m going to assume that it is possible to put both the dedicated and integrated GPUs to work, though I’ve never seen this kind of setup.
This is likely not something you want to actually do.
The integrated GPU in your processor is not an additional bit of computing power your computer is not using, but special software that can use your processor to put out graphics if a dedicated GPU is missing. It is extremely inferior at processing graphics compared to the real dedicated GPU, and if you were running firefox to watch (Not decode) youtube, you would very likely see things like screen tearing as the processor struggled to keep up.
If you wanted to do this just to see the outcome for yourself, you could switch your displayport cable to your monitor to connect to your motherboard instead of your GPU to get an idea of how rough this would be. If you wanted to continue after seeing this, I believe you would need to connect a 2nd monitor in order to use both the dedicated and integrated GPUs.
This is such a stupid idea, it could have only come from Larry Ellison. I guess you would need everything tied together so that you can watch every person all the time in every place.

It’s not harmful, but it really depends on what roles you’re trying to land.
I usually recommend going for A+ then Network+, then Linux+ for new technicians at data centers.
If you’re worried about interviewing, I can say from the other side of the table that actual projects and working through issues shows experience more clearly than simply studying for and passing a cert. Even something simple like setting your desktop/server to be the DHCP server (instead of the router being the DHCP server)

Electron apps were the biggest pain pont - I would be typing in discord and there was noticeable lag and letters would disappear until I have several characters beyond them. I worked around this by using discord on their website in a browser tab.
Not sure which update resolved this, but it’s now working as I expect it to, so I think if you choose to use a Nvidia GPU, you should have an okay time. I would just say to consider a beefier AMD GPU as well, since they tend to have much better driver support in Linux
